The aromatic notes of its flavor go well with dishes of a certain consistency such as salads, grilled fish dishes, the classic dry pasta, soups and soups.
TRADITION
Perched on a hill in the Cilento rises the ancient village of Aquara. Founded by Greek settlers, it was affected by the presence of many local populations, including Etruscans, Samnites, and Lucans. Strong was the Roman presence, well documented thanks to the findings of archaeological remains related to a residential nucleus.Aquara then saw the succession of Goths, Byzantines, Lombards, Saracens and finally Normans always maintaining a prosperous and frequented center.

Today it preserves the original structure and from the top of its 500 meters above sea level it frames the green hills of Salerno. Between these hills and the valleys there are large olive groves from which is obtained an oil with exceptional organoleptic characteristics. The extra virgin olive oil "Colline Salernitane" has ancient roots, and has always been present in the territory of Campania.
Certain reports attribute the first cultivations to the work of the Phocians, among the first Greek settlers who arrived in Magna Grecia. Its wide diffusion is, however, due to the precise agricultural organization of the Romans, who put olive groves and production under control. One of the characteristics of this oil is the pinch in the throat that is felt by tasting it. This is due to the presence of an anti-inflammatory substance called "oleocantale" which seems to have painkiller properties similar to ibuprofen and helps cancer prevention.
